We put our spin on a caprese using ripe summer peaches! The juicy peach combined with the creamy mozzarella and sweet basil makes the perfect one-bite appetizer. We add a little bit of heat with the crushed red chiles (red pepper flakes).

1 ripe peach
6 mozzarella ciliegine
6 large basil leaves
extra virgin olive oil
flaked sea salt
crushed red chiles

method

Step 1

Slice peach into 12 bite-sized pieces. Cut mozzarella ciliegine in half. Tear large leaves of basil in half (leave whole if using smaller basil).

Step 2

Assemble the skewers on cocktail picks: peach, basil, then mozzarella.

Step 3

Once all skewers are assembled, drizzle with extra virgin olive oil and sprinkle with a pinch each of flaked sea salt and crushed red chiles. Arrange on platter and serve.
